Zucchini and Chocolate Chip Bars

Yes, another Zucchini recipe!!! I told you the garden had tons of them so I had to keep using these big huge zucchinis for something!!! The best part of this recipe is there is NO OIL! in my actual Zucchini Bread recipe I changed the oil for Applesauce but this doesn't need either.... But there is butter! :) Oops. This is a great recipe if you want something with chocolate but not something super rich. It has a great balance between a bread and a dessert to make a perfect light dessert bar. Enjoy!


Here's what you'll need.....
2 Cups Zucchini, Grated
3/4 Cups Butter
1/2 Cup Brown Sugar
2 Eggs
1 Teaspoon Vanilla Extract
1 3/4 Cups Flour or Whole wheat flour
1/2 Teaspoon Salt
1 1/2 Teaspoons Baking Powder
1 1/2 Cup Chocolate Chips
Mini Loaf pan or you can make bars with a 9x13 inch pan

First,  preheat oven to 350° F.  Also Shred your zucchini. I peel it first with a potato peeler then put it in my food processor. Or you can shred it your self with a cheese grader. 

Cream  your softened butter, sugar, eggs, and vanilla in your mixer. 

Next, add your dry ingredients.


Now fold in your zucchini and chocolate chips.

Grease a 9×13 inch pan and pour the batter in. Bake for 35 minutes.
I Placed mine in a mini Loaf tin and baked for 28 minutes. They made perfect Bars with no cutting!!! 

Let them cool and Watch Out because these are supppppppper moist!  Enjoy!
